Healthy Oatmeal Fruit Bake

Alright, so by no means am I a great cook – weird since I have a ‘recipe’ category on my blog, right?  Hear me out.

I am that person who screws up the “You can’t mess it up- it’s soooo easy to make” recipe. I’m here to share those recipes that are truly easy to make and that are scrumptiously delicious… Oh yeah, and I prefer to healthy ones.


Today, I’m sharing this super easy (I swear) Oatmeal Fruit Bake.  I’ve made this for breakfast multiple times, and it is a hit! ; ) What I truly love about this recipe is that you can easily substitute a few of the ingredients. For example… the type of fruit; I’ve used peaches, strawberries, and apples. The hubby said the strawberry one was the best, but he doesn’t like peaches and could care less for apples..sooooo. I thought the peach one was delicious- I love peaches! You be the judge.


Another ingredient I’ve easily substituted is the type of milk; I’ve used almond milk, cashew milk, or skim milk in different batches and it doesn’t affect the dish at all.  Awesome!



Another ingredient that is completely optional are the nuts. I love the crunch, but since I was planning of giving some to my toddler (nuts are a choking hazard), I didn’t add it to the entire batch. Instead, I topped half of the bake with walnuts… great addition!


Here’s what you’ll need:


Vegetable oil spray
2 large eggs
2/3 cup of milk (again, I’ve used almond, cashew or skim)
1/4 cup of light brown sugar
2 tbsp of honey
1 teaspoon baking powder
1/2 teaspoon of salt
1/2 tablespoon of cinnamon (manipulate this amount based on your cinnamon liking)
2 1/2 cups of rolled oats
1 1/2 cups of your choice of fruit (apples, peaches, strawberries, blueberries, etc.)
1/2 cup of dried fruit (raisins and/or cranberries)
*optional* 1/2 cup of nuts. You can include in the batch or just add to the top of the bake.

What you’ll do:

1- Preheat the oven to 375ºF.
2- Coat a shallow, ovenproof container with the vegetable oil
3- Beat the eggs and milk in a bowl.
4- Add the brown sugar, honey, baking powder, salt, cinnamon and stir until thoroughly combined.
5-Stir in the oats, fruit, and dried fruit and mix well. *Add nuts
6- *optional* Top with nuts.
7- Add the mixture to your greased dish. Bake for approximately 20-25 minutes.
8- Let it cool for a few minutes before serving. Enjoy!
