
This is the easiest, most versatile food item I can make. Roasting any kind of veggies is absolutely delicious! This can easily be added as a side to a main dish, thrown into a salad, or eaten alone as a snack. There’s always some kind of roasted vegetable in my fridge ready to be eaten.
What I do…
- Heat the oven to 400 degrees
- Chop all my veggies (I make a lot for plenty of leftovers)
- Coat them in olive oil (usually 1 tablespoon will do)
- 1 tablespoon of garlic powder
- 1 tablespoon of onion powder
- 1 tablespoon parsley leaves
- Salt and black pepper to taste
- Toss the veggies with all the seasonings
- Roast veggies for about 30 minutes, until tender
